Courtesy of Allen Cain, attached is an article from the January 2014 Railroad Model Craftsman which shows a method for modeling watermelons and ventilated boxcars, plus a few words on the traffic in melons.
If you don't want to model the ventilated boxcar you can substitute a livestock car as was done by the railroads.
